I just made a single serve batch of the best soup I think I’ve ever made. Recipes don’t really mean much to me, but here is a general idea of how I made it.
You will need:
- One large baking potato
- 1/2 T butter
- 2 slices of bacon
- Diced onion (sweet and / or green, i used both), to taste
- Dollop Sour Cream
- Salt, Pepper, other favorite seasonings
Ok, this is all very vague on purpose. Everyone likes loaded potatoes prepared differently, so just gather what you like on a baked potato and proceed. Here is how I did it:
In a large boiler or sauce pan over medium heat, cook
Diced bacon, adding onions about halfway before the bacon is done.
Remove the bacon, onions, and whatever else you had sauteing, set aside.
Add peeled, diced potatoes with water to cover. Cook over high heat until potatoes become soft and mashable.
Drain potatoes, reserving some of the liquid.
Puree potatoes with half of bacon and onion mixture, butter, cheese, sour cream and anything else you want smoothified, adding reserved boiling juice as needed to reach a nice creamy consistency.
Return puree to boiler with remaining bacon mixture over LOW heat. DO NOT BOIL.
Heat through, stirring constantly.
Eat.
